Dinner rolls with garlic butter

In the fifth episode of Vegan Thanksgiving recipes I've made dinner rolls. They were mind blowing good!

Recipe for 9 big buns or 15 small buns

This is what you need:


Dough

  • 100 grams vegan butter

  • 100 grams sugar

  • 2,5 dl plant milk

  • 1 topped tablespoon with sourdoughstarter or 1/4 pack of fresh yeast

  • 500 grams flour

  • 1/2 tablespoon cardamom

  • 1/2 teaspoon salt

  • extra butter for smearing

  • extra plant milk for coating


Garlic butter

  • one whole garlic

  • tin foil

  • olive oil

  • 100 grams vegan butter

  • 1/2 ts salt

  • 1 tablespoon dried parsley or one handful of fresh chopped parsley


This is what you do:

  1. Start by making the dough. Melt vegan butter and sugar together in a casserole over the stove or in the microwave. If you are baking with sourdough, pour cold milk into the butter and sugar and mix together. If you are baking with yeast them warm milk together with the butter and sugar, then let it cool to body temperature.

  2. Have sourdoughstarter/yeast in a bowl. Pour in the cold (sourdough) or luke warm (yeast) liquid into the bowl. Mix together to the sourdoughstarter or yeast dissolves.

  3. Put flour, cardamom and salt into the bowl. Mix into a dough. Let it rise for 12 hours if you are using sourdoughstarter or 1 hour if you are using yeast.

  4. Preheat the oven to 200 Celcius. Find a whole garlic and cut of the top. Put it in tin foil, pour over some olive oil and wrap the tin foil around the garlic. Put it in the warm oven for 45 minutes. When it's done, take it out and open the tin foil to let the garlic cool.

  5. When the dough has risen, take it out on the counter and cut into 9 or 15 pieces. Depending on if you want big or small buns. Roll them into buns and put them in a small baking dish smeared with vegan butter. Let it rise for a second time. 1 hour if you are baking with sourdough and 30 minutes if you are baking with yeast.

  6. Make the garlic butter by squeezing the garlic into a bowl and mixing together with vegan butter, salt and dried or fresh parsley.

  7. Preheat the oven to 175 Celcius and coat the buns with plantmilk. Then put them in the warm oven for 35-40 minutes if you're buns are big. If they're smaller, they probably need less time and you have to watch them.

  8. When you take the buns out of the oven, coat them with the garlic butter and be generous. Serve luke warm as a side dish and enjoy!
