It's the fourth episode of my series vegan Thanksgiving recipes. It's really good!
Recipe for 4-6 people as a side dish
This is what you need:
400 grams mushrooms
1 onion
4 cloves of garlic
6 dl vegan cream or coconut milk
2 dl water
2 tablespoons vegetable bouillon
2 teaspoons nutmeg
1 teaspoon pepper
2 dl nutritional yeast
300 grams green beans
100 grams fried onions
This is what you do:
Preheat the oven to 175 Celcius.
Clean the mushrooms with a brush and cut them into small slices. Fry them in a dry pan.
Dice onion and fry them in a casserolle, to they get soft and shiny. Then put in minced garlic and fry on low heat.
When the mushrooms are done, put them in the casserole with the onion and garlic. Also put in cream, water, vegetable bouillon, nutmeg, pepper and nutritional yeast. Blend it together with a hand mixer, in a food processor or in a blender. It is done when it's smooth.
Have green beans in a baking dish with baking paper. Spread it out evenly, then pour over the mushroom soup and spread fried onions on top. Put in the middle of the oven for 30 minutes.
Serve as a side dish or main dish!
